Fiber can be thought of in layman’s terms as roughage, meaning it is neither digested nor absorbed by the body after being consumed. It is also found only in plants, not in animal products. Dietary fiber is made up of two types that have traditionally been referred to as either soluble or insoluble but those terms are sometimes replaced with viscous and fermentable, respectively. The Food and Nutrition Board, the group that presented the above definition, is also responsible for issuing nutritional recommendations in the form of Recommended Dietary Allowances (RDAs). However, there is no RDA for fiber. Instead, the group has set Adequate Intake (AI) guidelines based on age and gender. The Total Fiber AI guidelines are: 38 grams per day for men between 18 and 50 years of age and 30 grams per day for men over 50; 25 grams per day for women between 18 and 50 years of age and 21 grams per day for women over 50.

Why is fiber important? There are several benefits of consuming the daily AI, which are related to the way the body processes fiber. Soluble (or viscous) fiber absorbs water, dissolving to form a glue-like substance that binds to dietary cholesterol and removes it from the body as it passes through the intestines, thereby reducing serum cholesterol levels. This aids in prevention of coronary heart disease and reduces hypertension. To achieve this effect, beans and oats are considered the best fiber sources.
